  • 1 lb ground beef Use 80/20 for best results
  • 1 cup breadcrumbs Can use gluten-free if needed
  • 1 large egg
  • 1 small onion, finely chopped Or substitute with other veggies
  • 1 cup ketchup or barbecue sauce For topping or mixed in

Optional Ingredients

  • 1 cup shredded cheese Cheddar or pepper jack for a gooey texture
  • 1 cup shredded zucchini or spinach For added nutrition

Preparation

  • Preheat the oven to 375°F (190°C). Grease a muffin tin generously.
  • In a mixing bowl, combine ground beef, breadcrumbs, egg, onion, and half of the ketchup or barbecue sauce. Mix gently.
  • Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  • Top each muffin with the remaining ketchup or barbecue sauce.

Cooking

  • Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the muffins rest for a couple of minutes before serving.

Notes

These muffins can be prepped ahead and stored in the fridge. They also make great leftovers for sandwiches or pasta dishes. Try different herbs and spices to customize the flavor.
