  • 4 pieces Cod fillets (wild-caught or farm-raised) Fresh or high-quality frozen, thawed
  • 2 tablespoons Extra-virgin olive oil For moisture and flavor
  • Juice of 1 Lemon Freshly juiced or zested
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika

  • Fresh herbs (parsley, dill, cilantro)
  • Lemon wedges

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the cod fillets dry with paper towels.
  • Lightly dust both sides of the cod with a mixture of seasoned flour, paprika, and garlic powder.
  • Brush the fillets with olive oil and lemon juice, then let marinate for 15 minutes.

Cooking

  • Sear the fillets skin-side down in a hot skillet for 2 minutes.
  • Transfer the fillets to a greased baking sheet.
  • Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork.
  • Remove from oven and let rest for 5 minutes before serving.

Notes

Leftovers can be stored in a sealed container for up to 3 days. For a more complex flavor, add a dash of Dijon mustard to the olive oil mixture.
