  • 4 pieces boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
  • ¼ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to garnish Fresh parsley, chopped

Preparation

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • Season the chicken breasts with salt, pepper, oregano, basil, and paprika.
  • In a baking dish, place the seasoned chicken breasts.
  • Add zucchini slices, cherry tomatoes, olives, and minced garlic around the chicken.
  • Drizzle olive oil over the chicken and vegetables.
  • Cover the baking dish with foil and bake for 20 minutes.
  • Remove the foil, sprinkle feta cheese over the chicken, and bake for an additional 10 to 15 minutes or until the chicken is cooked through.
  • Garnish with fresh parsley and serve hot.

Notes

Best served hot. Can be paired with rice, quinoa, or a fresh salad. Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave.
