Ingredients
  

Main Ingredients

  • 2 cans canned salmon, drained and flaked 6 oz each
  • 1 cup fresh spinach, finely chopped or 1/2 cup thawed, drained frozen spinach
  • ¼ cup red onion, finely chopped
  • 2 cloves garlic, minced
  • cup feta cheese, crumbled
  • ½ cup breadcrumbs (panko or regular)
  • 2 large eggs, beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill (optional)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Olive oil for frying

Optional Garnish

  • Lemon wedges
  • Tzatziki sauce

Instructions
 

Preparation

  • Drain the salmon and remove any bones or skin if you like. Flake it with a fork in a large bowl.
  • Cook spinach in a dry pan over medium heat for 2 minutes until wilted. Let it cool, then squeeze out excess moisture.

Mixing

  • Add spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill, lemon juice, zest, oregano, salt, and pepper to the salmon. Mix well.

Cooking

  • Form the mixture into 6–8 patties, about 3 inches wide.
  • Heat olive oil in a pan over medium heat. Cook patties for 3–4 minutes per side until crispy and golden brown. Drain on paper towels.

Notes

Make sure to squeeze out as much moisture from the spinach as possible to prevent soggy patties. Freeze uncooked patties for later use. Experiment with different herbs or add chopped olives for more Mediterranean flavors.
