Main Ingredients
- 3 very ripe bananas mashed
- 2 cup all purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter melted and slightly cooled
- 2 large eggs beaten
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
Cooking
Preheat. Heat the oven to 350 degrees F and grease a 9x5 inch pan. Combine the wet mixture. Mash the bananas, then stir in the sugar, cooled butter, eggs, and vanilla.
Whisk the dry mixture. Mix the flour, baking soda, and salt in a separate bowl.
Fold. Fold the dry ingredients into the wet in two additions, stopping when no flour streaks remain.
Pan it. Scrape the batter into the pan and level the top.
Bake 50 to 55 minutes. Bake until deep golden and a toothpick comes out clean.
Cool. Rest in the pan for 10 minutes, then move to a rack until fully cool.
Substitutions: Use brown sugar for half of the sugar, or add 1/2 cup walnuts or chocolate chips.
Tips: Cool the melted butter slightly and do not overmix.
