  • 1 lb cooked shrimp, peeled and deveined Use fresh and high-quality shrimp for best flavor.
  • 1 cup tomato juice
  • ½ cup fresh lime juice
  • ½ cup ketchup
  • ½ cup finely chopped white onion
  • ½ cup chopped fresh cilantro
  • 1 medium cucumber, peeled and diced
  • 2 medium tomatoes, seeded and diced
  • 1 medium avocado, diced

Preparation

  • In a large bowl, combine the cooked shrimp, tomato juice, lime juice, ketchup, onion, cilantro, cucumber, tomatoes, and avocado.
  • Gently stir to combine all the ingredients together.
  • Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  • Serve cold in bowls.

Notes

Serve with tortilla chips on the side for added crunch. Garnish with lime wedges or extra cilantro for enhanced presentation. Leftovers can be stored in an airtight container in the refrigerator for up to two days.
