Main Ingredients

  • 4 cups cooked chicken, shredded or cubed Use rotisserie or leftover chicken.
  • 8 oz cream cheese Warm slightly for easier mixing.
  • 1 cup sour cream
  • 1 can cream of chicken soup Substitute with any creamy soup if desired.
  • 2 cups shredded cheese Don't skimp on cheese!
  • 2 tbsp mayonnaise Optional but adds creaminess.
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried parsley Optional for garnish.

Topping

  • 1 cup crushed crackers or potato chips For crunchy topping.
  • 2 tbsp butter, melted To mix with topping.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine shredded or cubed cooked chicken, cream cheese, sour cream, cream of chicken soup, and shredded cheese.
  • Add mayonnaise, garlic powder, salt, pepper, and dried parsley to the mixture and stir until well combined.
  • Transfer the filling into a baking dish, spreading it evenly.
  • In another bowl, mix crushed crackers or potato chips with melted butter. Sprinkle this mixture evenly over the casserole filling.

Baking

  • Bake in the preheated oven for 30 minutes or until bubbly and golden on top.

Notes

You can make this casserole ahead of time and refrigerate, baking when ready. It can also be frozen before baking.
