Ingredients
  

Crust

  • 2 pieces refrigerated pie crusts (unbaked)

Filling

  • 5 large eggs
  • ½ cup whole milk
  • 1 teaspoon Kosher salt
  • ½ teaspoon ground black pepper
  • Add-ins of choice Feel free to get creative with your add-ins, like vegetables, meats, or cheeses.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Spray a 24-count mini muffin tin with nonstick spray and set it aside.
  • Cut out circles from the pie crust using a 2-inch cookie cutter and place one circle into each muffin cup. Poke the bottom of each crust with a fork twice.
  • In a large bowl, whisk the eggs, milk, salt, and pepper together.

Baking

  • Pour the egg mixture into the tins until each is full and top with any add-ins you choose.
  • Bake for 15-18 minutes, or until the tops begin to turn golden brown.

Serving

  • Serve warm and enjoy!

Notes

If you have leftovers, store the mini quiches in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for about 30 seconds or warm in the oven at 350°F (175°C) for 10 minutes. Freezing is also an option, cool completely before storing in an airtight container for up to a month.
