Ingredients

Main Ingredients

  • 1 package frozen mixed vegetables Thawed and drained if frozen
  • 1 medium onion, chopped Adds sweetness and flavor
  • 2 stalks celery, chopped For crunch
  • 1 cup shredded cheddar cheese Can substitute with mozzarella
  • 1 cup mayonnaise For creaminess; Greek yogurt can be used for a lighter version
  • 1 cup crushed Ritz cracker crumbs Use for topping

Instructions

Preparation

  • Start by selecting fresh or frozen mixed vegetables like broccoli, carrots, and peas. If using frozen, thaw and drain them to avoid a soggy casserole.
  • Chop the vegetables into equal pieces for even cooking. Consider blanching them briefly to enhance flavors and maintain color.

Making the Sauce

  • In a bowl, mix mayonnaise with shredded cheese and a bit of milk until you achieve a smooth consistency.
  • For more flavor, incorporate garlic powder, onion powder, or black pepper into the sauce.

Baking

  • Preheat the oven to 375°F (190°C).
  • Combine the prepared vegetables with the sauce, then transfer to a baking dish.
  • Top with crushed Ritz crackers for a crunchy finish.
  • Bake for approximately 30 to 40 minutes, checking for doneness.
  • For an extra crispy texture, broil for the last 5 minutes of cooking.

Serving

  • Allow the casserole to cool for a few minutes before slicing and serving. Enjoy!
