  • 1.5 cups Ripe bananas, mashed About 3 to 4 medium bananas
  • ½ cup Melted butter Unsalted butter recommended
  • ½ cup Granulated sugar Adjust based on sweetness of bananas
  • ½ cup Brown sugar Packed for best results
  • 2 large Eggs Room temperature
  • ½ cup Sour cream Can substitute with Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour Sifted
  • 1 teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 tablespoon Cornstarch

Optional Mix-Ins

  • 1 cup Chocolate chips Or nuts like walnuts or pecans
  • ½ cup Dried fruit Such as cranberries or blueberries

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the melted butter and both sugars to the mashed bananas, and mix well.
  • Incorporate the eggs, sour cream, and vanilla into the mixture.
  • Gently blend in the dry ingredients including flour, baking soda, salt, and cornstarch until just combined.

Baking

  • Pour the batter into the prepared pan.
  • Bake for 60 minutes, covering the top with foil after the first 45 minutes to prevent browning.

Notes

Wrap your warm banana bread in foil to keep it moist. Store in an airtight container or freeze for longer preservation. You can experiment with different mix-ins for unique flavors.
