Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • ½ cup applesauce
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped apples such as Granny Smith or Honeycrisp
  • Optional: ½ cup chopped walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • In a large bowl, beat together oil, applesauce, sugar, eggs, and vanilla until well combined.
  • Gradually stir the dry ingredients into the wet mixture until just combined (do not overmix).
  • Fold in chopped apples and optional nuts.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool before slicing. Serve plain or with a dusting of powdered sugar.
