  • 2 tbsp olive oil
  • 2 cup yellow onion diced
  • 3 lb 80/20 ground beef
  • 1 cup bread crumbs
  • 3 large eggs beaten
  • ½ cup whole milk
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp onion powder
  • 1 ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ cup ketchup for the meat
  • 2 tbsp Worcestershire sauce
  • 3 tbsp fresh parsley chopped
  • 1 cup ketchup for the glaze
  • ⅓ cup brown sugar for the glaze

Cooking

  • Heat the oven to 350 degrees F. Line a half sheet pan with heavy-duty foil and spray it lightly with nonstick spray.
  • Saute the onions in the olive oil over medium heat until tender and browned, about 10 minutes. Let them cool for a few minutes.
  • Mix the onions with the beef, bread crumbs, eggs, milk, salt, pepper, onion powder, garlic powder, Italian seasoning, 1/2 cup ketchup, Worcestershire sauce, and parsley, just until combined.
  • Shape the mixture into a long loaf on the pan and flatten the top slightly.
  • Whisk the brown sugar with 1 cup ketchup and spread the glaze over the loaf.
  • Bake for 65 to 80 minutes, checking at 60 minutes, until the center reads 160 degrees F.
  • Rest for 10 to 15 minutes before slicing.

Notes

Nutrition is an estimate. Ground beef must reach 160 degrees F. Refrigerate leftovers within 2 hours and use within 3 to 4 days.
