  • ½ cup peanut butter Creamy or chunky based on preference.
  • 2 cups quick oats Do not use steel cut oats.
  • 1 teaspoon vanilla extract Use real vanilla extract if possible.
  • ¼ teaspoon salt Optional for those who enjoy the salty-sweet combo.

Preparation

  • Measure out all ingredients before starting.
  • In a large saucepan, melt the butter over medium heat.
  • Add sugar, cocoa powder, and milk to the melted butter and stir until smooth.
  • Bring the mixture to a rolling boil and let it boil for 1.5 to 2 minutes without stirring.
  • Remove the pan from the heat and mix in peanut butter, vanilla, and salt until melted and glossy.
  • Stir in the quick oats until fully combined.
  • Drop spoonfuls of the mixture onto parchment paper, forming mounds.
  • Allow the cookies to cool and set. If desired, place in the refrigerator to speed up the process.

Notes

For best results, ensure to properly boil the sugar mixture to achieve the right texture. These cookies can be made with variations like Nutella instead of peanut butter. Store in an airtight container, keeping them at room temperature or in the fridge if the weather is humid.
