Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted

For the cheesecake filling

  • 16 oz cream cheese, softened Make sure it's softened for easier mixing.
  • 1 cups heavy cream Whip until stiff peaks form.
  • 0.5 cups powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 0.25 cups fresh orange juice
  • 1 tablespoon orange zest
  • 0.25 cups orange gelatin (Jell-O)
  • 1 teaspoon orange extract

Preparation

  • In a medium bowl, combine the graham cracker crumbs and sugar.
  • Stir in the melted butter and mix until evenly coated.
  • Press the mixture into the bottom of a 9-inch springform pan or pie dish to form the crust.
  • Chill in the refrigerator for at least 30 minutes to firm up.

Making the filling

  • In a separate bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and vanilla extract, mixing until combined.
  • In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • Add the orange juice, orange zest, orange gelatin, and orange extract to the cream cheese mixture, folding them in until fully incorporated.

Assembly

  • Pour the cheesecake mixture onto the chilled crust and smooth the top.
  • Refrigerate the cheesecake for at least 4 hours, or overnight, to set.

Notes

Garnish with additional orange zest or whipped cream before serving. Store leftovers in the refrigerator for 3-4 days.
