No-Peek Chicken Casserole

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (brown or white)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water
  • 1 tablespoon butter for greasing the pan
  • 1 envelope Lipton Onion Soup mix

Preparation

  • Preheat the oven to 350°F (175°C).
  • Using the tablespoon of butter, grease a 9x13 inch baking pan.
  • In a medium bowl, mix the cream of mushroom soup, cream of chicken soup, water, and Minute Rice.
  • Pour the mixture into the buttered baking pan.
  • Place the chicken breasts on top of the rice mixture.
  • Evenly sprinkle the Lipton Onion Soup mix over the chicken breasts.
  • Cover the pan with aluminum foil and bake in the preheated oven for about 1 to 1.5 hours, or until the chicken is thoroughly cooked.

Notes

Serve warm with a simple side salad or steamed vegetables. For added flavor, sprinkle fresh herbs before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You may also freeze the casserole before baking, ensuring it is well covered.
