Nutella Stuffed Cookies

Nutella stuffed cookies are soft, chewy treats filled with creamy Nutella that melt in your mouth, perfect for sharing or enjoying on your own.

Ingredients
  

For the cookie dough

  • 120 g unsalted butter (cut into 1 cm cubes – fridge cold is fine)
  • cup brown sugar (tightly packed)
  • 1 large egg (at room temperature)
  • 1 ⅓ cups plain flour / all-purpose flour
  • ½ tsp baking soda (bi-carbonate soda)
  • ¼ tsp cooking salt / kosher salt
  • 1 tsp vanilla extract
  • 1 tsp honey (or corn syrup)

For the filling

  • 10 tbsp Nutella (or other chocolate-nut spread)
  • ½ cup dark chocolate chips (or chopped 70% dark chocolate)

Instructions
 

Preparation

  • In a bowl, mix the cold butter, brown sugar, and vanilla extract until creamy.
  • Add the egg and mix well.
  • In another bowl, combine flour, baking soda, and salt.
  • Slowly mix the dry ingredients into the wet mixture. Stir in chocolate chips.

Cookie dough

  • Prepare the cookie dough as described above and let it chill in the fridge for about 30 minutes.

Frozen Nutella mounds

  • Scoop out small mounds of Nutella on a baking sheet lined with parchment paper.
  • Freeze until firm, about 30 minutes.

Stuffing and baking

  • Preheat the oven to 350°F (180°C).
  • Take a scoop of cookie dough and flatten it in your hand.
  • Place a frozen Nutella mound in the center, cover with more dough, and roll it into a ball.
  • Bake for 10-12 minutes until golden brown around the edges.

Notes

Allow the cookies to cool slightly before serving. They are best enjoyed warm. Store in an airtight container at room temperature for up to a week or freeze them.
