Nutella Stuffed Cookies

Ingredients
  

Cookie Ingredients

  • 10 tbsp Nutella (or other chocolate-nut spread)
  • ½ cup dark chocolate chips (or chopped 70% dark chocolate)
  • 1 ⅓ cups plain flour / all-purpose flour
  • ½ tsp baking soda (bi-carbonate soda)
  • ¼ tsp cooking salt / kosher salt
  • 120 g unsalted butter, cut into 1 cm / 1/2" cubes (fridge cold is fine)
  • cup brown sugar tightly packed
  • 1 tsp vanilla extract
  • 1 tsp honey (or corn syrup)
  • 1 large egg (55g / 2 oz, at room temperature)

Instructions
 

Preparation

  • In a large bowl, mix together the butter and brown sugar until creamy.
  • Add in the egg, honey, and vanilla extract. Mix until well combined.
  • In another bowl, combine the flour, baking soda, and salt.
  • Slowly mix the dry ingredients into the wet ingredients. Fold in chocolate chips.

Chill the Dough

  • Chill the cookie dough for about 30 minutes to make it easier to work with.

Prepare Nutella Mounds

  • While the dough chills, scoop Nutella onto a baking sheet lined with parchment paper and freeze until firm, about 30 minutes.

Stuffing and Baking

  • Preheat your oven to 350°F (175°C).
  • Take a small piece of cookie dough and flatten it in your hand.
  • Place a frozen Nutella mound in the center, then wrap the dough around it, forming a ball.
  • Place the cookie balls on a lined baking sheet, leaving space between each.
  • Bake for 10-12 minutes until lightly golden.

Notes

Serve warm with a glass of milk. Dust with powdered sugar for an extra touch. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
