Ingredients
  

Dry Ingredients

  • 1 cup oats You can grind them into flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon cinnamon If preferred

Wet Ingredients and Add-ins

  • 2 grated or mashed apples
  • 2 grated carrots
  • 3 eggs You can substitute with vegan options
  • ½ cup honey or crushed dates

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a cake pan.
  • In a bowl, mix together the ground oats, grated apples, grated carrots, eggs, honey (or dates), cinnamon, baking powder, and salt until well combined.
  • Pour the mixture into the prepared cake pan.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool before serving.

Notes

Serve warm or at room temperature. Enjoy plain or with yogurt or nuts on top. Store in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. Freeze individual slices wrapped in plastic wrap for up to three months.
