Ingredients
  

  • 1 cup chopped dates about 8 oz
  • ½ cup water
  • ¼ cup granulated sugar for filling
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • ½ cup brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter melted

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking dish.
  • In a small saucepan, combine dates, water, and granulated sugar. Cook over medium heat, stirring frequently until thickened (about 8–10 minutes). Remove from heat and stir in vanilla.
  • In a mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir until mixture resembles coarse crumbs.
  • Press half of the mixture into the bottom of the prepared pan.
  • Spread the date filling evenly over the crust.
  • Sprinkle remaining oat mixture on top and press down gently.
  • Bake for 25–30 minutes, until golden brown.
  • Cool completely before slicing into bars.
