- 1 cup chopped dates about 8 oz
- ½ cup water
- ¼ cup granulated sugar for filling
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- ½ cup brown sugar
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter melted
Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking dish.
In a small saucepan, combine dates, water, and granulated sugar. Cook over medium heat, stirring frequently until thickened (about 8–10 minutes). Remove from heat and stir in vanilla.
In a mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir until mixture resembles coarse crumbs.
Press half of the mixture into the bottom of the prepared pan.
Spread the date filling evenly over the crust.
Sprinkle remaining oat mixture on top and press down gently.
Bake for 25–30 minutes, until golden brown.
Cool completely before slicing into bars.
