  • 2 pounds ground beef (80/20)
  • 1 tablespoon olive oil (optional) Can be omitted if you prefer not to use oil.
  • 1 large yellow onion, diced
  • 2 cups elbow macaroni Use any pasta shape you prefer.
  • 2 cans diced tomatoes
  • 2 cups beef broth
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and cook until it turns translucent.
  • Add the ground beef and cook until it is browned.
  • Stir in the garlic powder, paprika, salt, and pepper.
  • Add the diced tomatoes, beef broth, and macaroni.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes until the macaroni is tender.
  • Serve hot.

Notes

For extra flavor, consider adding chopped bell peppers or mushrooms. For a bit of heat, add red pepper flakes or diced green chiles. Stir occasionally to prevent sticking. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
