  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ¼ cups milk
  • 1 large egg
  • 2 tbsp unsalted butter melted and slightly cooled
  • 1 tsp vanilla extract
  • butter or neutral oil for the pan

Cooking

  • Whisk the flour, sugar, baking powder and salt together in a large bowl.
  • In a second bowl, whisk the milk, egg, melted butter and vanilla until combined.
  • Pour the wet mixture into the dry and stir just until no dry flour remains. The batter should be thick but pourable, with a few lumps. Let it rest for 5 minutes.
  • Warm a griddle or large skillet over medium heat and brush lightly with butter or oil.
  • Scoop 1/4 cup of batter per pancake, leaving space between them.
  • Cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set.
  • Flip and cook 1 to 2 minutes more until golden brown. Keep finished pancakes warm in a 200°F oven while you cook the rest.

Notes

Makes about 8 pancakes at 1/4 cup of batter each, so 2 pancakes per serving. Use fresh baking powder for the best rise. Nutrition values are an estimate for 2 pancakes calculated from the ingredients and will vary.
