Ingredients
  

  • 1.5 lbs beef stew meat chuck roast, cut into chunks
  • 1 tbsp olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 2 cups water
  • 2 large carrots peeled and sliced
  • 2 celery stalks chopped
  • 2 potatoes diced
  • 1 14.5 oz can diced tomatoes
  • 1 cup green beans fresh or frozen
  • 1 cup corn kernels
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat. Brown the beef on all sides.
  • Add onions and garlic and sauté for 2–3 minutes until fragrant.
  • Pour in beef broth and water. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
  • Add carrots, celery, potatoes, and tomatoes. Simmer for another 30 minutes.
  • Add green beans, corn, thyme, salt, and pepper. Simmer for a final 15–20 minutes until vegetables are tender.
  • Adjust seasoning as needed and serve hot.
