- 1.5 lbs beef stew meat chuck roast, cut into chunks
- 1 tbsp olive oil
- 1 large onion diced
- 2 cloves garlic minced
- 4 cups beef broth
- 2 cups water
- 2 large carrots peeled and sliced
- 2 celery stalks chopped
- 2 potatoes diced
- 1 14.5 oz can diced tomatoes
- 1 cup green beans fresh or frozen
- 1 cup corn kernels
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
In a large pot or Dutch oven, heat olive oil over medium heat. Brown the beef on all sides.
Add onions and garlic and sauté for 2–3 minutes until fragrant.
Pour in beef broth and water. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
Add carrots, celery, potatoes, and tomatoes. Simmer for another 30 minutes.
Add green beans, corn, thyme, salt, and pepper. Simmer for a final 15–20 minutes until vegetables are tender.
Adjust seasoning as needed and serve hot.
