- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup cherry tomatoes halved
- 1 small red onion sliced
- 1 zucchini sliced
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon dried Italian herbs
- Fresh basil for garnish (optional)
Season chicken with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side until golden and cooked through. Remove and set aside.
In the same pan, add sliced onions, zucchini, and cherry tomatoes. Cook for 4–5 minutes until softened.
In a small bowl, whisk together balsamic vinegar, honey, and Italian herbs.
Return the chicken to the skillet and pour the balsamic mixture over everything.
Let simmer for 5–7 minutes, allowing the sauce to reduce slightly and coat the chicken and veggies.
Garnish with fresh basil if desired, and serve warm.
