Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1 small red onion sliced
  • 1 zucchini sliced
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon dried Italian herbs
  • Fresh basil for garnish (optional)

Instructions
 

  • Season chicken with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  • In the same pan, add sliced onions, zucchini, and cherry tomatoes. Cook for 4–5 minutes until softened.
  • In a small bowl, whisk together balsamic vinegar, honey, and Italian herbs.
  • Return the chicken to the skillet and pour the balsamic mixture over everything.
  • Let simmer for 5–7 minutes, allowing the sauce to reduce slightly and coat the chicken and veggies.
  • Garnish with fresh basil if desired, and serve warm.
