Ingredients
  

  • 1 tablespoon olive oil
  • 2 boneless skinless chicken breasts, diced
  • Salt and pepper to taste
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 package 9 oz refrigerated cheese tortellini
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper, then cook until golden and cooked through, about 5–6 minutes. Remove and set aside.
  • In the same skillet, sauté garlic for 1 minute.
  • Add sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for another minute.
  • Pour in chicken broth and heavy cream; bring to a simmer.
  • Add tortellini and cook for 5–6 minutes until tender.
  • Stir in Parmesan cheese and return chicken to the skillet. Simmer for 2–3 more minutes until sauce thickens.
  • Garnish with fresh basil or parsley and serve hot.
