- 1 tablespoon olive oil
- 2 boneless skinless chicken breasts, diced
- Salt and pepper to taste
- 3 cloves garlic minced
- ½ cup sun-dried tomatoes chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes optional
- 1 cup heavy cream
- ½ cup chicken broth
- 1 package 9 oz refrigerated cheese tortellini
- ½ cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper, then cook until golden and cooked through, about 5–6 minutes. Remove and set aside.
In the same skillet, sauté garlic for 1 minute.
Add sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for another minute.
Pour in chicken broth and heavy cream; bring to a simmer.
Add tortellini and cook for 5–6 minutes until tender.
Stir in Parmesan cheese and return chicken to the skillet. Simmer for 2–3 more minutes until sauce thickens.
Garnish with fresh basil or parsley and serve hot.
