  • 450 g baby potatoes, halved or quartered
  • 225 g green beans, washed and trimmed
  • 1 small yellow onion, sliced or cut into wedges
  • to taste Sausages of your choice
  • as needed Olive oil
  • to taste Salt and pepper
  • optional Garlic powder

Instructions
 

Preparation

  • Preheat the oven to 200°C (400°F).
  • In a large bowl, toss the baby potatoes with olive oil, salt, pepper, and garlic powder if using.
  • Spread the potatoes on one side of a baking sheet lined with parchment paper.
  • On the other side, add the trimmed green beans and onion wedges.
  • Place the sausages on the same sheet.
  • Drizzle everything with a bit more olive oil and season as desired.

Cooking

  • Roast in the oven for about 25-30 minutes or until the sausages are cooked through and the vegetables are tender.

Serving

  • Serve hot and enjoy as a complete meal on its own or with crusty bread.

Notes

Make sure to cut the potatoes into similar sizes for even cooking. You can add herbs like rosemary or thyme for extra flavor. Adjust seasoning based on your preference.
