Ingredients
  

  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 20 oz package refrigerated cheese tortellini
  • 1 14.5 oz can diced tomatoes (undrained)
  • 1 ½ cups marinara sauce
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions
 

  • Heat a large skillet over medium heat. Add the sausage and cook until browned, breaking it up with a spoon (about 5–7 minutes). Drain excess grease if necessary.
  • Add diced onion and garlic, cooking for another 2–3 minutes until softened.
  • Stir in tortellini, diced tomatoes, marinara sauce, chicken broth, and Italian seasoning.
  • Bring to a simmer, then reduce heat to medium-low. Cover and cook for 10–12 minutes, stirring occasionally, until tortellini is tender.
  • Uncover and sprinkle mozzarella and Parmesan over the top. Cover again just until cheese melts.
  • Garnish with chopped basil or parsley if desired. Serve hot.
