- 1 lb Italian sausage mild or spicy, casings removed
- 1 small onion diced
- 2 cloves garlic minced
- 1 20 oz package refrigerated cheese tortellini
- 1 14.5 oz can diced tomatoes (undrained)
- 1 ½ cups marinara sauce
- 1 cup chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Heat a large skillet over medium heat. Add the sausage and cook until browned, breaking it up with a spoon (about 5–7 minutes). Drain excess grease if necessary.
Add diced onion and garlic, cooking for another 2–3 minutes until softened.
Stir in tortellini, diced tomatoes, marinara sauce, chicken broth, and Italian seasoning.
Bring to a simmer, then reduce heat to medium-low. Cover and cook for 10–12 minutes, stirring occasionally, until tortellini is tender.
Uncover and sprinkle mozzarella and Parmesan over the top. Cover again just until cheese melts.
Garnish with chopped basil or parsley if desired. Serve hot.
