  • 1 tablespoon olive oil or butter Use whichever you prefer
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 cups vegetable broth
  • 2 cups elbow macaroni Or pasta of choice
  • 1 cup shredded cheddar cheese Add more for extra cheesiness
  • Salt and pepper to taste
  • Optional: diced tomatoes or pickles for topping

Cooking

  • Heat the olive oil or butter in a large pot over medium heat.
  • Add the diced onion and minced garlic. Sauté until the onion is translucent.
  • Add the ground beef, cooking until browned. Drain excess fat if necessary.
  • Stir in the vegetable broth and bring to a simmer.
  • Add the macaroni and cook according to package instructions until al dente.
  • Once the pasta is cooked, stir in the cheddar cheese until it is melted and creamy.
  • Season with salt and pepper to taste.
  • Serve warm with optional toppings.

Notes

For an extra cheesy dish, use more cheddar or mix in mozzarella. Consider adding veggies for added nutrition. If you like spice, add hot sauce or diced jalapeños.
