  • 1 lb ground beef Use lean ground beef to cut down on fat.
  • 1 small onion, diced
  • to taste Salt and pepper
  • 2 tbsp taco seasoning
  • 1 tsp garlic powder
  • 1 cup long grain white rice
  • 1.5 cups beef broth
  • 1 15 oz can corn, drained
  • 8 oz tomato sauce
  • ½ cup salsa Use spicy salsa for a kick.
  • 1 cup shredded cheese

  • In a large skillet, cook the ground beef and diced onion over medium-high heat until the beef is browned. Add salt and pepper to taste. Drain any excess fat.
  • Stir in the garlic powder and taco seasoning, mixing well.
  • Add the rice, beef broth, corn, tomato sauce, and salsa to the skillet. Bring everything to a boil.
  • Once boiling, cover the skillet, reduce the heat, and let it simmer for 18-20 minutes until the rice is tender.
  • Sprinkle the cheese on top, cover again, and cook for 2-3 minutes until the cheese is melted.

Notes

You can add toppings like sour cream, chopped cilantro, or additional salsa for extra flavor. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.
