Ingredients
  

Main Ingredients

  • 2 large russet potatoes or 3 medium potatoes
  • 1 tbsp peanut oil canola or olive oil also works
  • cooking spray for the baking sheet
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp granulated sugar
  • ½ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp red chili flakes adjust to heat preference
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper

Cooking

  • Wash, peel, and cut the potatoes into fries about 1/2 inch thick.
  • Soak the fries in ice water for at least 30 minutes, then drain, rinse, and dry very well.
  • Toss the dry fries with the oil, then mix the spices and toss until evenly coated.
  • Place a baking sheet in the oven and heat to 390 degrees F. Carefully remove the hot pan and spray it with cooking spray.
  • Spread the fries in a single layer and bake for about 20 minutes. Flip and bake 10 to 15 minutes more until golden and crisp.
  • Taste for salt and serve hot.

Notes

Prep time includes the 30 minute soak. Serve with ketchup or spicy mayo. Refrigerate leftovers within two hours and eat within 3 days. Reheat in the oven or air fryer. Nutrition is an estimate.
