Vegetables

  • 2 cups zucchini, chopped Can also use bell peppers or asparagus.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.
  • Pat the tilapia fillets dry with a paper towel to ensure crispiness.
  • In a mixing bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  • Coat the tilapia fillets in the marinade thoroughly.
  • Place the fillets skin-side down on the prepared baking sheet.
  • In the same bowl, toss the chopped zucchini and red peppers in any remaining marinade, and spread the vegetables around the fish on the baking sheet.

Cooking

  • Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Serving

  • Remove the baking sheet from the oven and let it cool for a minute.
  • Garnish with chopped parsley and serve with lemon wedges.
