- 2 ribeye steaks about 1-inch thick, 12–16 oz each
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic smashed
- 2 –3 sprigs fresh rosemary or thyme
- Salt and freshly ground black pepper to taste
Preheat oven to 400°F (200°C).
Season steaks: Pat steaks dry with paper towels. Rub with olive oil, then season generously with salt and pepper on both sides.
Sear: Heat a cast-iron skillet over high heat. Once hot, sear steaks for 2 minutes per side until browned. Add butter, garlic, and herbs to the pan during the last minute of searing.
Bake: Transfer skillet to the preheated oven. Roast for 5–7 minutes for medium-rare, depending on thickness. Use a meat thermometer to check (130°F for medium-rare).
Rest and serve: Remove from oven, tent loosely with foil, and let rest for 5–10 minutes before slicing and serving.
