Ingredients
  

For the turkey

  • 6 pounds Bone-in turkey breast Thawed
  • ½ cup Butter Softened for rub
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Dried herbs Such as thyme or rosemary
  • 1 teaspoon Garlic powder Optional
  • 1 medium Onion Cut into wedges, for roasting
  • 2 medium Carrots Chopped, for roasting

Instructions
 

Preparation

  • Thaw the turkey breast in the fridge 1-2 days prior.
  • Preheat the oven to 350°F (175°C).
  • Loosen the skin of the turkey and slather butter under the skin and on the outside. Season with salt, pepper, herbs, and garlic powder.

Cooking

  • Place onion and carrots in the bottom of a roasting pan.
  • Position turkey breast, skin side up, on top of vegetables.
  • Roast for about 20 minutes per pound or until the thickest part of the turkey reaches 165°F (74°C) with a meat thermometer.
  • Tent with foil if you prefer softer skin, but leave it off for a crispier result.
  • Rest the turkey for 15-20 minutes before slicing.

Notes

For best results, let the turkey rest after cooking. Store leftovers quickly in the fridge for optimal tenderness.
