Main Ingredients
- 3 overripe bananas mashed
- 1 large egg at room temperature
- ¼ cup unsalted butter melted
- 1 tsp vanilla extract
- ½ cup brown sugar
- 1 cup all purpose flour
- 1 tsp baking soda

Cooking
Mix the batter. Heat the oven to 350 degrees F, mash the bananas, then mix in the egg, butter, vanilla, and sugar.
Fold in the dry ingredients. Add the flour, baking soda, and salt and fold until just combined.
Add chocolate. Stir in most of the chips and pour the batter into a greased 9 by 5 inch pan.
Bake. Top with the reserved chips and bake for 50 to 60 minutes until a toothpick comes out clean.
Cool. Cool in the pan for 10 minutes before moving to a rack.
Substitutions: Sour cream or plain yogurt can replace the butter.
Tips: Mix gently so the loaf stays tender.
Storage: Keep wrapped at room temperature for up to 3 days.
