Ingredients
  

For the Peach Filling

  • 6-7 large large peaches, sliced About 900 grams
  • ½ cup granulated sugar 100 grams
  • 2 teaspoons cornstarch 6 grams
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon lemon juice 14 grams

For the Batter

  • 8 tablespoons salted butter 113 grams, 1 stick
  • cups all-purpose flour 150 grams
  • teaspoons baking powder 6 grams
  • ½ teaspoon kosher salt
  • ½ cup granulated sugar 100 grams
  • ½ cup brown sugar 107 grams
  • ½ teaspoon ground cinnamon
  • ¾ cup milk 170 grams
  • 2 teaspoons pure vanilla extract 8 grams

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Wash the peaches thoroughly and slice them into wedges.
  • In a large bowl, add the sliced peaches, ½ cup granulated sugar, cornstarch, ground cinnamon, and lemon juice. Gently mix the peaches and let the bowl sit.

Batter Preparation

  • Place the butter in a 9x13-inch baking dish and put the dish in the oven to melt the butter.
  • While the butter is melting, prepare the batter. In a large bowl, whisk together the flour, baking powder, kosher salt, ½ cup granulated sugar, brown sugar, and ground cinnamon.
  • In a measuring cup, stir the milk and vanilla extract together. Pour the milk mixture into the bowl with the dry ingredients and mix until combined.

Assembly and Baking

  • Carefully remove the baking dish from the oven. Pour the batter evenly over the melted butter without stirring it.
  • Using a large spoon, place the peaches on top of the batter, making sure to include some of the juices from the peaches.
  • Bake the dish in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and the edges are bubbling.
  • Remove the cobbler from the oven and let it cool for about 5 minutes. Serve warm with a big scoop of vanilla ice cream.

Notes

Use fresh, ripe peaches for the best flavor. Adjust sugar levels based on sweetness of peaches. Serve with whipped cream or yogurt for a lighter topping option.
