Ingredients
  

Cookie Dough

  • 1 cup creamy peanut butter Use creamy peanut butter for the best texture.
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt

Filling and Topping

  • 1 cup semi-sweet chocolate chips, melted
  • 1 cup marshmallow fluff Can be warmed for easier spreading.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt; mix until smooth.
  • Roll tablespoon-sized portions into balls and place them on the prepared sheet, flattening slightly with a fork.

Baking

  • Bake for 8-10 minutes until the edges are golden.
  • Cool on the rack.

Assembly

  • Spread melted chocolate on one cookie, add marshmallow fluff, and top with another cookie to create a sandwich.
  • Let sit for 10 minutes to allow chocolate to set.
  • If desired, torch the marshmallow fluff lightly before serving.

Notes

These cookies are best enjoyed warm. Store in an airtight container at room temperature for up to a week. For longer storage, freeze them for up to three months.
