Ingredients
  

For the brownie batter

  • 200 grams unsalted butter (1 3/4 US sticks)
  • 1 ¼ cups dark chocolate chips (7 oz)
  • 1 cup brown sugar loose packed
  • 3 large eggs lightly beaten
  • 1 tsp vanilla extract
  • ½ cup plain flour
  • ¼ cup cocoa powder
  • tsp cooking salt or kosher salt

For the peanut butter filling

  • 1 cup smooth peanut butter spread for stuffing
  • 1 tsp salt flakes divided

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a pot over low heat, melt the butter and dark chocolate chips, stirring until smooth.
  • Remove the pot from heat and mix in the brown sugar until well combined, then add the eggs and vanilla extract, stirring until combined.
  • In another bowl, whisk together the flour, cocoa powder, and remaining salt flakes. Gradually mix this into the chocolate mixture until just combined.

Assembly

  • Pour half of the brownie batter into the prepared pan.
  • Spoon the peanut butter on top, then cover with the remaining brownie batter.

Baking

  • Bake for about 25-30 minutes, or until a toothpick comes out mostly clean, with a few moist crumbs.

Notes

Serve warm with a scoop of vanilla ice cream or dusted with powdered sugar. Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week or freeze for a month. Use smooth peanut butter for a creamy filling, crunchy for texture. Cool butter and chocolate before adding eggs to avoid cooking them. Do not overmix after adding dry ingredients.
