  • 4 pieces 8'' flour tortillas
  • ½ cup shredded mozzarella cheese Use more for extra cheesiness.
  • 1 cup pizza sauce For dipping, you can reserve some.
  • 1 cup pepperoni slices Feel free to substitute with other toppings.

Cooking

  • Heat a skillet over medium heat.
  • Place one tortilla in the skillet and sprinkle half of the shredded mozzarella evenly over it.
  • Add a layer of pepperoni slices and a few tablespoons of pizza sauce.
  • Sprinkle the remaining cheese on top and cover with another tortilla.
  • Cook for about 3-4 minutes until the bottom tortilla is golden brown.
  • Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  • Remove from the skillet, let cool slightly, then cut into wedges.

Notes

Serve with extra pizza sauce for dipping, and add toppings like sour cream or guacamole for added flavor. Store leftovers in an airtight container for 2-3 days.
