Ingredients
  

  • 1 block 7–8 oz firm tofu, pressed and sliced
  • 2 tbsp olive oil for frying tofu
  • Salt & pepper to taste
  • 4 slices of whole grain or sourdough bread or gluten-free if desired
  • ¼ cup vegan pesto store-bought or homemade
  • Sliced tomato
  • Fresh spinach or arugula
  • Optional: avocado slices vegan cheese

Instructions
 

  • Press tofu for at least 15 minutes to remove excess moisture. Slice into ¼-inch slabs.
  • Heat olive oil in a skillet over medium heat. Pan-fry tofu slices until golden brown on both sides. Season with salt and pepper.
  • Toast bread slices to desired crispness.
  • Spread pesto on one side of each bread slice.
  • Layer tofu, sliced tomatoes, and greens. Add optional toppings if using.
  • Close the sandwich and serve warm or at room temperature.
