- 1 block 7–8 oz firm tofu, pressed and sliced
- 2 tbsp olive oil for frying tofu
- Salt & pepper to taste
- 4 slices of whole grain or sourdough bread or gluten-free if desired
- ¼ cup vegan pesto store-bought or homemade
- Sliced tomato
- Fresh spinach or arugula
- Optional: avocado slices vegan cheese
Press tofu for at least 15 minutes to remove excess moisture. Slice into ¼-inch slabs.
Heat olive oil in a skillet over medium heat. Pan-fry tofu slices until golden brown on both sides. Season with salt and pepper.
Toast bread slices to desired crispness.
Spread pesto on one side of each bread slice.
Layer tofu, sliced tomatoes, and greens. Add optional toppings if using.
Close the sandwich and serve warm or at room temperature.
