Ingredients
  

For the Sandwich

  • 1 loaf Whole Grain Bread or any preferred bread Choose a sturdy bread like ciabatta or gluten-free.
  • 8 oz Extra-Firm Tofu Make sure to press moisture out for a better texture.
  • ½ cup Pesto Can be homemade or store-bought.
  • 1 cup Fresh Vegetables Suggested: Tomatoes, Arugula, Cucumbers, Bell Peppers, Radishes.

Optional Toppings

  • ¼ cup Feta Cheese or Olives For added flavor and texture.

Instructions
 

Preparation

  • Press excess moisture from the tofu by wrapping it in a towel and placing a weight on top for 30 minutes.
  • After pressing, slice the tofu into 1/2 inch thick pieces.

Cooking

  • For pan-frying, heat a little oil in a pan and cook the tofu slices for 10-15 minutes until golden brown.
  • Alternatively, for baking, preheat the oven to 400°F and roast the tofu for 25-30 minutes, flipping halfway through.

Assembling

  • Select your bread and spread a generous amount of pesto on one slice.
  • Place the cooked tofu on the other slice.
  • Layer fresh vegetables on top of the tofu.
  • Add any desired toppings like feta cheese or olives.
  • Close the sandwich gently and press down to combine the flavors.

Notes

For meal prep, store each ingredient separately. Toast the bread right before assembly to maintain freshness.
