  • 1 whole fresh pineapple, trimmed and cut into cubes
  • 1 cup sugar
  • ½ cup apple cider vinegar
  • 1-2 pieces jalapeño peppers, finely chopped Adjust based on spice preference
  • ¼ cup bell peppers, finely chopped
  • 1 package fruit pectin

Preparation

  • Combine the pineapple, jalapeño peppers, and bell peppers in a large pot.
  • Crush the pineapple lightly with a potato masher.
  • Add the sugar and apple cider vinegar to the pot and stir.
  • Bring the mixture to a boil over medium heat, stirring frequently.
  • Once boiling, add the fruit pectin and stir well.
  • Continue to boil for about 5 minutes, stirring constantly.
  • Remove from heat and carefully ladle the hot jelly into sterilized jars.
  • Seal the jars and process them in a boiling water bath for 10 minutes.
  • Allow the jars to cool and store them in a cool, dark place.

Notes

Finely chop jalapeños and bell peppers for even flavor distribution. Adjust jalapeño amount to control spiciness. Ensure jars are sterilized before filling.
