Pizza Stuffed Mushrooms

Ingredients
  

Mushroom Preparation

  • 5 large large mushrooms (10cm/4" wide, portobello or flat mushrooms) Choose firm mushrooms to hold the filling well.
  • 2 tbsp olive oil For brushing the mushrooms.
  • to taste Salt and pepper Use to season the mushrooms.

Stuffing Ingredients

  • cup pizza sauce Store-bought is fine.
  • 100 g salami slices (chopped) Feel free to add more toppings such as pepperoni.
  • ¼ red onion (finely chopped)
  • cup black olive slices
  • 1 cup mozzarella cheese (shredded) You can use other cheeses like Parmesan or cheddar.

Instructions
 

Preparation

  • Preheat your oven to 180C/350F.
  • Carefully break or cut the stems off the mushrooms and chop them for later use.
  • Place the mushroom caps upside down and cut a small cross in each to help drain excess water.
  • Brush the tops of the mushrooms with olive oil and sprinkle with salt and pepper.
  • Flip the mushrooms and lightly dab the insides with remaining oil, then sprinkle with more salt and pepper.

Filling and Baking

  • Fill each mushroom with pizza sauce and top with chopped mushroom stems, onion, half of the salami, and half of the olives.
  • Bake the mushrooms for 10 minutes, then take them out.
  • Top with cheese, remaining salami, and olives.
  • Put them back in the oven and bake for another 10 minutes until the cheese is melted.
  • Serve immediately!

Notes

These stuffed mushrooms can also be cooked on a grill for a smoky flavor. If you have leftovers, place them in an airtight container in the fridge; they will stay good for about 2-3 days. Reheat in the oven or microwave.
