  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt

  • 8 slices thick-cut bread (like brioche or challah)
  • Butter or oil for cooking
  • Powdered sugar (optional)
  • Maple syrup (for serving)
  • Whipped cream (optional)

Preparation

  • In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined.
  • Heat a skillet or griddle over medium heat and add butter or oil.

Cooking

  • Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side. Let any excess mixture drip off before placing the bread on the skillet.
  • Cook each slice for about 2 to 3 minutes on each side, or until golden brown and cooked through.

Serving

  • Serve warm, with powdered sugar if desired. Add maple syrup and whipped cream if preferred.

Notes

Use thick slices of bread for the best texture. Soak the bread just long enough for it to absorb the mixture without falling apart. Experiment with different spices like clove or allspice for a unique flavor. Make it ahead of time! Prepare the pumpkin mixture and bread slices, then cook them in batches.
