Quick and Easy Beef and Broccoli

- 1 pound flank steak thinly sliced
- 2 tablespoons olive oil
- 3 –4 cups broccoli florets
- 2 cloves garlic minced
- 1 tablespoon minced fresh ginger
- ½ cup low-sodium soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- Optional: 1–2 teaspoons chili paste ¼ teaspoon red pepper flakes
Prepare the Sauce: In a small bowl, whisk together soy sauce, brown sugar, and cornstarch until smooth. Set aside.
Cook the Broccoli: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add broccoli florets and sauté for 3–4 minutes until tender-crisp. Remove from skillet and set aside.
Cook the Beef: In the same skillet, add the remaining tablespoon of olive oil. Add sliced flank steak and cook for 2–3 minutes until browned. Add minced garlic and ginger; cook for an additional 1 minute.
Combine and Simmer: Return broccoli to the skillet. Pour in the prepared sauce and stir to combine. Cook for 2–3 minutes until the sauce thickens and coats the beef and broccoli evenly.
Serve: Remove from heat and serve immediately over steamed rice or noodles.
