- 8 oz egg noodles or ramen noodles
- 1 lb boneless chicken breast or thighs thinly sliced
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 bell pepper sliced
- 2 green onions chopped
- 2 tablespoons sesame seeds optional
Teriyaki Sauce:
- ⅓ cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 cloves garlic minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water slurry
Cook noodles according to package instructions. Drain and set aside.
In a small bowl, mix all teriyaki sauce ingredients, including the cornstarch slurry. Set aside.
Heat oil in a large skillet or wok over medium heat. Add sliced chicken and cook until browned and cooked through.
Add broccoli and bell pepper. Stir-fry for 3–4 minutes until tender-crisp.
Pour the teriyaki sauce into the pan and stir well. Let it simmer for 2–3 minutes until thickened.
Add cooked noodles and toss everything together to coat evenly.
Garnish with green onions and sesame seeds.
Serve hot.
