  • 1 tablespoon olive oil For sautéing onions and garlic.
  • 1 cup diced tomatoes Fire-roasted for added flavor.
  • 1 cup chicken broth For a rich sauce.
  • 2 teaspoons curry powder Adjust to taste for spice level.
  • ½ cup Greek yogurt For creaminess in the curry.
  • 1 clove garlic, minced For aromatics.
  • 1 small onion, chopped Sauté for a flavor base.

Optional Vegetables

  • 1 cup bell peppers, diced Add for extra nutrition.
  • 1 cup spinach To enhance the dish's color and nutrition.
  • ½ cup peas For an added sweet touch.

Instructions
 

Preparation

  • Heat a tablespoon of olive oil in a pan over medium heat.
  • Add chopped onions and sauté until soft and translucent.
  • Add minced garlic and stir for a minute until fragrant.

Cooking

  • Sprinkle curry powder over the onion and garlic. Mix well.
  • Pour in diced tomatoes and chicken broth, and let it simmer.
  • If using uncooked chicken, add it now and brown it on all sides.
  • If using pre-cooked chicken, add it now to heat through.
  • Let everything simmer for about 10-15 minutes to blend the flavors.

Serving

  • Serve hot with steamed brown rice or naan.
  • Garnish with cooked vegetables if desired.

Notes

Feel free to customize the spice level to your preference. Adding vegetables increases the nutritional value.
