  • 6-7 pieces fresh raspberries, plus more for garnish
  • 5 leaves fresh mint leaves, plus more for garnish
  • 1 piece lime, cut into wedges
  • 2 ounces white rum (60 milliliters)
  • 4 ounces club soda (120 milliliters)
  • 1 tablespoon sugar

Preparation

  • Place the mint leaves in a cocktail shaker. Add the lime wedges with the pulp facing up and cover them with sugar.
  • Muddle the mint and lime together to release the juice. Be careful not to over-muddle; you want to extract the juice, not make mush.
  • Add the fresh raspberries to the shaker and crush them along with the mint and lime.
  • Pour in the white rum and shake the mixture vigorously for a few seconds to combine all the flavors.
  • Fill a highball glass with ice and pour your raspberry mint mojito over the ice.
  • Add the club soda and stir gently to mix everything together.
  • Garnish with additional mint leaves, raspberries, and thinner lime wedges if desired.

Notes

Use fresh ingredients for the best taste. Adjust sweetness by adding more or less sugar based on your preference. If you like a stronger mint flavor, feel free to add more mint leaves when muddling. This drink is best served fresh; store mixture (without club soda) in the refrigerator for up to a day.
