Ingredients
  

  • 1 cup red lentils dry
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ¼ cup fresh parsley or cilantro chopped
  • 1 tsp ground cumin
  • ½ tsp turmeric
  • ½ tsp chili flakes or paprika
  • Salt and pepper to taste
  • ¼ cup chickpea flour or substitute with all-purpose flour
  • Water as needed
  • Olive oil or avocado oil for frying

Instructions
 

  • Rinse red lentils and soak in hot water for 15–20 minutes. Drain well.
  • Add lentils to a food processor and pulse until a coarse paste forms (not fully smooth).
  • Transfer to a bowl. Mix in chopped onion, garlic, herbs, spices, salt, pepper, and flour. Adjust with water if the mixture is too thick.
  • Heat oil in a skillet over medium heat. Drop spoonfuls of batter and gently flatten.
  • Fry 3–4 minutes per side, or until golden and crisp.
  • Remove to paper towel-lined plate. Serve warm with yogurt dip, tahini, or chutney.
