Ingredients
  

For the fritters

  • 1 cup red lentils, cooked Cooked lentils should be soft.
  • 1 large potato, boiled and mashed Adds texture and flavor.
  • ¼ cup onion, finely chopped Provides flavor.
  • 1 clove garlic, minced Enhances flavor.
  • ¼ cup fresh parsley, chopped For fresh taste.
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup breadcrumbs For coating.
  • ½ cup cooking oil For frying.

Preparation

  • Wash the red lentils under cold water to remove dirt.
  • Soak the lentils in water for at least one hour or overnight for better digestion.
  • Boil or steam the soaked lentils until tender.
  • In a mixing bowl, combine cooked lentils, mashed potato, onion, garlic, parsley, salt, and pepper.
  • Mix well until a thick batter forms. Adjust with breadcrumbs if the mixture is too wet.

Cooking

  • Shape the mixture into patties about 1/4 inch thick and coat each with breadcrumbs.
  • Heat oil in a skillet over medium-high heat.
  • Fry the patties for 3-4 minutes on each side or until golden brown.
  • Drain on paper towels to remove excess oil before serving.

Notes

Serve with tzatziki, guacamole, or hummus. Fritters can be baked at 375°F for a healthier alternative.
