  • 1 pie crust 1 refrigerated pie crust, thawed per package directions
  • 1 cup 1 cup peanut butter Use smooth peanut butter for best texture.
  • 1 cup 1 cup brown sugar
  • 2 large 2 large eggs
  • 1 teaspoon 1 teaspoon vanilla extract
  • ½ cup 1/2 cup chocolate chips Can substitute with butterscotch or white chocolate chips.
  • ½ cup 1/2 cup chopped Reese's Peanut Butter Cups

Preparation

  • Preheat the oven to 350°F (175°C).
  • Place the refrigerated pie crust in a pie dish and set aside.
  • In a large mixing bowl, blend together peanut butter, brown sugar, eggs, and vanilla extract until smooth.
  • Stir in chocolate chips and chopped Reese's Peanut Butter Cups.
  • Pour the mixture into the prepared pie crust.
  • Bake for 30-35 minutes, or until the center is set.
  • Allow to cool before serving.

Notes

Serve warm or at room temperature. Enhance with vanilla ice cream, chocolate syrup, or whipped cream. Store leftovers in the refrigerator for up to 3-4 days or freeze for up to 2 months.
