  • 4 pieces ripe bananas (mashed, about 2 cups or 450 grams) Use very ripe bananas for sweetness.
  • 3 large eggs (150 grams)
  • ½ cup salted butter (room temperature, 1 stick or 113 grams)
  • ½ cup brown sugar (107 grams)
  • ½ cup granulated sugar (99 grams)
  • cup creamy peanut butter (90 grams) Can substitute with crunchy peanut butter for added texture.
  • 2 cups all-purpose flour (240 grams) Can substitute some with whole wheat flour for a healthier option.
  • 1 teaspoon baking soda (6 grams)
  • 2 cups Reese’s Peanut Butter Cups (roughly chopped and divided, about 350 grams) Adjust according to taste.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Spray two 9×5-inch loaf pans with nonstick spray or line them with parchment paper. Set aside.
  • In a large bowl, add the mashed bananas, eggs, butter, brown sugar, granulated sugar, and peanut butter. Beat together using a hand or stand mixer until the mixture is light and fluffy, about 2-3 minutes.
  • Add the flour and baking soda to the bowl and mix until just combined, about 1 minute.
  • Fold in 1 cup of the chopped Reese’s Peanut Butter Cups.
  • Pour the batter evenly into the prepared pans.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool for 10 minutes. Top each loaf with the remaining chopped Reese’s Peanut Butter Cups.

Notes

Serve warm or at room temperature. Add a smear of peanut butter or a drizzle of chocolate sauce for an extra treat. Store any leftovers in an airtight container for up to 3 days or wrap and freeze for up to 2 months.
